I love the combination of blueberries and cornmeal. This batter was thin so I could cook only one pancake at a time or they would have run into one another. I also had to set the berries in place after pouring the batter into the pan. Obviously this was a bit tedious and not something I would want to do very often, but the results were great. The pancakes were slightly crisp on the outside with a whole grain texture on the inside.
