While I might have preferred these chicken stips grilled, they remained very moist and tender because they cooked quickly in a super hot oven. They were lean and light and the lemon zest added a bright fresh flavor. I've had an unopened jar of Hawaiian black sea salt in the back of my cupboard for ages. Now that I've discovered what a delicious and pretty finishing salt it is I am sprinkling it on everything I can, including the roasted asparagus and chopped salad I served alongside the chicken.
