This version of my cornmeal-olive oil cake is infused with the juice and zest of oranges, which compliment the cornmeal and rosemary.

Roasted Skate with Lime-Mint Gastrique

I roasted this skate with only pepper and then brushed it with a sweet and sour gastrique I made with sugar, white wine vinegar, lime zest and chopped mint leaves.

Farro Salad with French Feta

After allowing the farro to cool slightly I tossed it with French feta, French olives, tomatoes, asparagus tips and lemon zest. A power meal.

Cinnamon Poached Pears

This is a very light dessert. The pears are poached in simple syrup with spices, and served hot or cold.
